2 cups all purpose flour
2 cups yellow cornmeal
2 Tbs baking powder
1 tsp salt
1/2 tsp black pepper
1 1/2 cups whole milk
2 sticks unsalted butter, melted
1/4 cup honey
2 large eggs
3/4 cup cheddar cheese, grated
1/3 cup jalapeƱos, finely chopped
1 jalapeƱo, sliced paper thin

  1. Preheat oven to 350° F. Spray a 9-inch cast-iron skillet with cooking spray. In a bowl, combine the flour, cornmeal, baking powder, salt and pepper. Stir to combine.
  2. Add milk, butter, honey, eggs, cheese and chopped jalapeños. Stir together until all ingredients are incorporated. Pour the batter into the skillet, and top with jalapeño slices.
  3. Bake for 40 to 45 minutes or until a toothpick inserted into the center comes out clean. Let cool slightly before serving.
